Chilli Lime and Gin Oysters

1 Lime Juice
1 Teaspoon finely grated lime zest
1 Shot Gin ~ we used Roku Gin (click here for review)
1/2 Teaspoon Ginger
1 Teaspoon Mirin
1 Teaspoon White Sugar
1/2 Red Birds Eye Chilli ~ remove seeds for less heat or keep them to blow your socks off.
2 Dozen Oysters ~ Medium Size ~ Too big kind a freaks me out

~ Place all ingredients in a jar, cover with lid (important – don’t forget to put the lid on) and shake vigorously.
~ Drizzle a small amount over each oyster just before serving, or an hour before for a more intense flavour.

Enjoy with a G+T ~ try a Roku with a premium tonic, slice of blood orange and sprig of rosemary! Delish!
